How to Grow Early White Vienna Kohlrabi from Seed

Direct sow kohlrabi seeds outdoors in early spring as soon as the soil can be worked, or start indoors 4–5 weeks prior to your last spring frost date. For an extended autumn harvest, sow again in mid-to-late summer.

Sow seeds approximately 6 mm (1/4 inch) deep and 2.5 cm (1 inch) apart in rows spaced 30 cm (12 inches) apart. Thin emerging seedlings to a final spacing of 10–15 cm (4–6 inches) apart to allow space for bulb formation.

Choose a full sun location with fertile, moist, and well-draining soil. Water consistently and deeply to keep the soil evenly moist; steady moisture ensures bulbs stay tender, sweet, and crisp without turning woody.

Harvest when bulbs reach 5–8 cm (2 to 3 inches) in diameter by cutting the stem just below the base of the bulb.
