White Vienna is an early-maturing variety that resists bolting and is best harvested when the stem reaches 5–7.5 cm in diameter. Consistent irrigation is crucial during dry spells for optimal growth. Its crisp, white flesh has a nutty flavor when eaten raw and a mild cabbage-like taste when cooked. For a continuous harvest, sow seeds every two weeks from April to early August.
